Listeria monocytogenes is widespread in the environment, found in soil, water, sewage, and decaying vegetation.  It can be readily isolated from humans, domestic animals, raw agricultural commodities, and food packing and processing environments (particularly cool damp areas).   L. monocytogenes has been shown to persist in equipment and the processing environment in harborage sites.   

L. monocytogenes can survive longer under adverse environmental conditions than can many other vegetative bacteria that present a food safety concern. In addition to being able to survive and grow at refrigeration temperatures, L. monocytogenes tolerates high salt concentrations (such as in non-chlorinated brine chiller solutions) and survives frozen storage for extended periods.   It survives acid conditions and is more resistant to heat than many other non-spore forming foodborne pathogens, although it can be killed by heating procedures such as those used to pasteurize milk.  

The application of Good Manufacturing Practices and Preventive Control requirements in the production of RTE foods can significantly minimize or prevent contamination of a food with L. monocytogenes, and specifically Ready-to-Eat foods.

Speaker Profile

Tim Lombardo is the Covance Food Solutions Lead Staff Scientist for Food Microbiological and Food Safety Consulting.   With over 25 years of food safety experience, Tim has held many key food industry positions including production, quality, and sanitation, at both the factory and corporate level.  In addition to being a certified consultant for Safe Quality Food (SQF) and the British Retail Consortium (BRC), Tim also is a Lead Instructor with the International HACCP Alliance, Lead Instructor for FDA Food Safety Preventive Controls for Human Food, and a Qualified Individual for FDA Food Safety Preventive Controls for Animal Food.
