Listeria monocytogenes is widespread in the environment, found in soil, water, sewage, and decaying vegetation. It can be readily isolated from humans, domestic animals, raw agricultural commodities, and food packing and processing environments (particularly cool damp areas). L. monocytogenes has been shown to persist in equipment and the processing environment in harborage sites.
L. monocytogenes can survive longer under adverse environmental conditions than can many other vegetative bacteria that present a food safety concern. In addition to being able to survive and grow at refrigeration temperatures, L. monocytogenes tolerates high salt concentrations (such as in non-chlorinated brine chiller solutions) and survives frozen storage for extended periods. It survives acid conditions and is more resistant to heat than many other non-spore forming foodborne pathogens, although it can be killed by heating procedures such as those used to pasteurize milk.
Why should you attend
Complying with recent regulatory initiatives, implementing additional intervention strategies and managing your supply chain requires today’s food-based production companies to execute on new technical solutions and strategies. You can only demonstrate that your programs are truly effective with scientific data through your environmental program.
While this FDA guidance document does not establish legally enforceable responsibilities, the material does describe the Agency's current thinking on a topic. Information included in the guidance document should be viewed only as recommendations, unless specific regulatory or statutory requirements are cited.
This webinar will break down recommendations included in the guidance document and provide some practical solutions to each.
This webinar will provide attendees an example driven, step by step testing program template for demonstrating the effectiveness of your food safety programs.
